Tasks should have sub-categories and collapsible categories

When I work on projects, I would like to be able to assign the project to a
category and then break the project down into smaller tasks and assign those
tasks to that project. For example, say one category is items for client
Fred's Sweaters. Then I have projects such as 'update the sales items' and
'add the new items'. Then under update the sales items I would have 'get the
sales list from Sue', 'enter the items into the database', 'verify the
entries', etc...

I would then like to be able to look at the Fred's Sweaters category and
just see Update the Sales Items and Add the New Items if I want. However, I
would also like to be able to expand out one of those projects if I am
working on it and see the various steps and where I am at on each of them.

Does anyone have a way of doing this currently?

Sounds like you need a project management application. Outlook is
ill-suited to that.

You might could try the following in Outlook 2007? Create a category for
each project and then a category for each subcategory you wish to track. Now
assign a project category, including any desired subcategories, to the item.
Later on, just filter your search results to only include the project
category and subcategories you desire. Only the items with the desired
project name and subcategories will appear in the list. Note that it doesn't
matter that the subcategories are shared by many projects, since specifying
the project category will automatically eliminate items with like
subcategories assigned to other projects. Nevertheless, as Brian said, this
is a pretty dirty solution to a pretty complicated request.
