stopping outlook from auto completing deleted email addresses

When I send a new email by just typing in the name in the To: box, how can I
change outlook from auto completing an email address that I've deleted to
auto completing the new email address (for the same person with the same
name)?

For instance, when I begin to type Erika, it auto completes her old email
address that I've deleted in my contacts, even though I have a new address
for her in my contacts. Her display name is the same and I want it the same.

It would help answer more accurately if you posted your Outlook version.
I'll just make assumptions for now.
Remove individual addresses from the autocompletion cache by highlighting
the entry when presented in the suggested names list (use your arrow key to
migrate to the entry) and then hitting your Delete key before you tab out of
the field. To clear the entire cache, follow the instructions here:
