how do you stop the automatic capitalization on the next work on the next
line down when hitting the enter key. Some times we need to start the next
line down without a capitlaized word.

Don't press Enter when you don't want to start a new paragraph. Word assumes
that the beginning of a paragraph is the beginning of a sentence. Use
Shift+Enter to insert a line break. Alternatively, disable the option in
Tools | AutoCorrect Options.
