Simple Contact Information

Hi, I am trying to get going with Outlook but what I find is that I have to
look at way to much information about each contact. Is there any way to
reduce the number of fields that I see on the new contact page or better yet
customize the information that I enter about each contact myself? My contacts
never will have 4 or 5 different phone numbers etc etc
