signature added when opening a draft

Scenario: I receive a message and click reply. I begin typing the response
and get interrupted. I save the message in my drafts folder. Later when I
come back to complete my reply, I open the draft --- Outlook automatically
inserts an additional signature and enters edit mode. How do I make it stop?

I can't reproduce it in 2007. What version are you running? What kind of
mail server?
