Set default language for all docs? Remove default (no proofing tex

I want to create templates that have a default language of English U.S. When
I run spell check I get the message

"The spelling and grammar check is complete. Text set to (no proofing) text,
click Edit/Replace, click More, click Format, click Language and choose (no
proofing)."

I cannot seem to do anything to get rid of this "(no proofing) text" setting
and make all text "check-able", if you will, by the English U.S. dictionary
except for a manual change on individual documents. Is it possible to change
the default?

Any help would be greatly appreciated. (I am working on Word 2001 on the Mac.)

For PCs, see http://homepage.swissonline.ch/cindymeister/LangFmt.htm. But I
believe this may be one of the issues that are different on a Mac, so try
posting your question through
