Recreating User Shares

I recently went through a Disaster Recover test and
restored my Windows 2000 member server. One problem I
noticed is that the users shares where not restored.
Although this would not be a problem for a small group I
have over 500 users and it would be a monumental task to
recreate all the user shares. Does anyone have any
suggestions that would help me with this task?

B.T.W. I use Arcserve 2000 for my backups which is
supposed tosave the registry but we noticed in the test
that the print and printer subkey along with the user share
key where not restored.

Shares and their permissions are stored in the registry:

HKEY_LOCAL_MACHINE\System\CurrentControlSet\Services\LANManServer\Shares
