Protecting a Mail Merge letter

I am trying to protect a letter template with drop down and edit fields for
several employees to use with mail merge. If I create any drop down or edit
fields, I am not allowed to procted the document. Does anyone have any idea
if this is even a possibility? If so, how is it accomplished?
