Is there any software out there that will trap print jobs in a que and allow
users to go to print que and choose what job they want printed?

There is a is feature built into the Windows Operating System that allows
all printed jobs to be kept around in the print queue after those documents
have been printed initially. Any administrator should be able to deploy this
feature.
