POS Printer with Digital Dining for DOS

I am working with a restaurant on replacing one of their thermal receipt
printers. They are running Digital Dining (DOS version 6.4.0, circa 1993)
with a Seiko SII Model DPU-5347 receipt printer connected to a cash drawer.
I am trying to replace the printer with a Epson TM-T88II since they already
use two others on different terminals and would like to keep them all the
same so they can be swapped if any problems come up. The Seiko I am
replacing is the only one connected to a cash drawer. I have the Epson
wired properly and can print without a problem, but can't kick the drawer.
Digital dining is sending an ASCII Bell (07) for a drawer kick. The Epson
needs an ESC p (decimal 27 112) to activate the drawer.

I have not been able to find a menu in Digital Dining that will allow me to
change the string sent for a drawer kick. The actual code it is sending is
07 00 00 00 00 00 00 - from a hex dump done to the Epson printer. I could
do it through the receipt set up, but do not want to open the drawer every
time a check is printed.

Is anyone out there familiar with this old Digital Dining software and any
way to change the 07 00 code to the required 27 112?

If not, is there a way to make the Epson printer understand 07 is the drawer
kick command?

I would like to stick with the Epson if possible, for consistency with the
rest of the restaurant and because we can get them cheap ($150) on Ebay.
