PivotTables and large datasets

What's the best way to enable a PivotTable to address a data set containing
more than 65, 536 rows of data?

My one stipulation is that I must be able to hide the source data from the
clients that are using the PivotTable. I've been able to do this to date by
turning on protection for the worksheet that contains the source data.
