picking from contact list to send emails to

When I try to send an email and I click the contact list, it gives the the
contacts name with the email address and the same contacts name with the
business fax number. So if I have put a business fax number in my contact
list for a contact, that name appears twice when I get ready to select a name
from the contact list to send out an email. How can I only have the name with
the email show up?

Click the Contact List? How could anyone know what that means?
If you are referring to the Outlook Address Book, few questions are answered
more frequently:
Outlook considers fax numbers to be valid electronic addresses, since there
are many client- and server-based components that can use such addresses.

One method to hide fax numbers from the address book is to prefix the fax
number with one or more letters (maybe B for business fax, H for home, O for
other). If the fax number begins with a letter, Outlook won't show it in the
address book.

Another way to avoid having fax numbers appear in the address book is
simply not to enter data in the fax fields. Put fax numbers in some other
(non-phone) fields.

Forgive me, but I simply fail to understand the logic for this design.

If the first character is alphanumeric, then outlook will not consider it as an electronic address.But isn't the Fax number included to enable sending to faxes electronically?

The most logical way, in my opinion is to have a drop downlist to select the listing to be emails or fax numbers.

From use point of view, i think they would also prefer to see the fax details without need to do conversion by eliminating the F or watever in-front.
