Passwords in clear text?

If a term. server is sitting with a public i.p. address and I don't
connect through a VPN and just use the client are my user i.d. and
password being sent across the internet in clear text or with the
ability to be "sniffed" etc?

No way! All that information is encrypted a minimum of of
40-bit. You can push this up to 128-bit though.
