outlook 2003 format questions

I am having a few problems with basic formatting/display of my outlook
messages,
when I create, reply or forward an email my edit screen is now displaying
line returns, line breaks, how do I turn that off?

Also when I am inserting a file as an attachment to an email it inserts it
into the body of the email, it used to have an attachments line grouped with
CC, BCC and would list the file there, how do I get that back?
