Not simply a .pst export

this is not a .pst export question. My business partner doesn't save many
actual contacts and asked that I find a way to export the drop down history
list from his To: and CC: field from his desktop running Outlook 2003. What
file is that data stored in? Any ideas?

That is stored in an nk2-file. There are a couple of conversion tools
available to extract those to a csv-file or turn them into contacts.
