I have set up 3 email accounts. In each case the "Test account settings" was
successful.
When I attempt to reply to an email the "Accounts" option/button is not
visible to enable me to choose which account should appear in the "From"
field, which is blank when I click on "Reply".
The "From" field is also blank when I attempt to send a new message.
I do receive email to each of the accounts
Any advice will be appreciated.

That is not what the From field is for - and it will have no effect on which account will be used to send the email.

When you want to send your message after having composed it, click on the accounts button and that will select the sending account. Check your sent items after it has been sent to see the results.

unsolicited mail sent to my personal account will be deleted without
