if i want to change the style for the TOC to include the Ctrl+click to follow
the link to the section of the document, how do I add that back to the style,
after i update the TOC field.

OR

How do i reset it to default, once it has gone missing from the updated TOC?

The existence of hyperlinks in a TOC is controlled by the \h switch in the
field code. Look at
http://www.word.mvps.org/FAQs/Formatting/TOCSwitches.htm.

The \h switch is automatically included if you go through the Table of
Contents dialog to build it. I don't know how you could "lose" it without
specifically editing the field code.
