Multiple email account woes

Hope someone can help us with this one!

We have several email accounts; 1 account for each of 2 businesses (westwind
and snowypeak) and a personal account (lfangue). The snowypeak account is
set as the default account. We have Outlok set so that it prompts us for the
profile we want to use when we open it.

Here are the problems:
1) The lfangue account sends and receives for all 3, the snowypeak account
(default) only sends and receives for snowypeak and the westwind account
sends and receives only for westwind. Why?
2) When sending an email from lfangue account, it shows it has been sent
from snowypeak. But when we send something from westwind, it says it has
been sent from westwind. We have checked all the settings I can think of to
check, but they all seem to be set correctly and set the same for each of the
respective accounts. What are we either doing wrong, or not doing? We have
even tried to delete the lfangue account and start over. Is there a way to
specify which account we want the email sent from when we compose, and/or
send it?
3) When we compose a new email, or reply to one we have received, it will
intermittently bounce back with a mailer-daemon message that the recipient
can not be found. Sometimes we get a fatal error message, sometimes we can
send it again and it will go through, and sometimes we can forward it and it
will go through. Any ideas as to why this is happening?
