Matching case with motherboard

I'm thinking of building my own PC. I've been researching cases and
motherboards, and I think the Antec Plus660AMG case and either the Intel
D875PBZ or Ansus P4C800 boards meet my needs. However, looking at the
pictures of these components on various web sites, it does not appear the
boards match up with all of the openings on the back of the case? How does
one determine if a board fits in with a given case?

That's usually no problem. Each of the motherboards you mention comes with a
back panel adapter that replaces whatever back panel setup comes with the case.
Either will fit that case perfectly.

if it's an ATX case (it will be) then it'll fit. rear ports fit due to
backplate supplied with mobo.
hardest bit is attaching front panel connectors such as audio/usb/ etc but
this aint' too hard...
