Lookup selecting from multiple fields

Hi
I have a lookup field where I want to select any field from another table.
currently I can display each field but only select from one. Ultimately what
I want to do is create a form where I select from a catagory which links to
the next catagory to choose from. Can anyone advise how this maybe done?
