Is it possible to protect a drawing canvas only?

I have developed a flyer using the drawing canvas. At the bottom of the page
is just plain text that I don't want to protect - I only want to protect the
drawing canvas.

A canvas doesn't have any protection mechanism. Only sections do. You need
to insert a section break (probably a Continuous break) between the canvas
and the text. In Tools > Options > Protect Document (a dialog or a task
pane, depending on your Word version), click Sections and uncheck the
section that contains the text.
