I would like to view TASKS sorted by the "Category" field

When viewing Task Lists in the "Current View" an option is to view tasks by
Category. Yet, Outlook 2003 won't SORT the tasks by category. For example,
I'd like to view all my "work" tasks in a group, "financial" tasks in a
separate group, "errands" in another group, etc. -- instead of all mixed
together on the screen.

Use grouping, not sorting.

Thanks for the pointer in the right direction. However in my opinion a flaw
remains. Clicking on every other column in the task window causes a sort on
the column. The popup help for the column says "Sort by: Categories" just
like the help on every other column. Most table tools these days allow such a
sort, so why doesn't the task window conform (rhetorical question)?

I was hoping to see that an update fixing this had happened. Oh well...
Since there is a not so painful w/a this probably won't change.

Categories is not a simple text field. It can have multiple values. Therefore, it doesn't lend itself to a sort and never will.

Use the Group By box and Group by Category.
