I am looking for help to stop our Web forms being spammed

In the last couple of weeks we have experienced a chronic attack on some of
our Web-based forms. The result is a spamming of the fields and a mailing of
the junk information to the email address that is setup to receive the
information in the fields. I am looking for any help to stop the spamming as
these forms are important to our doing business. Thank you.

Place something that requires human interaction.
Many use an image with numbers or characters that must be entered in
the last field you then validate it and refuse submission if it
doesn't add up.
A less secure but easier way is to write something like "Write the sum
of 56 and 13 in the field". You then check if 69 was entered.
