how to turn off the style-adding to the template

How can i force Word stop littering my template every time
apply formatting to a text (e.g. i apply bold; i'm getting "Normal +Bold" as
a new style !!).

Tools > Options > Edit > uncheck 'keep track of formatting'.

These are not styles but "styles + formatting"; to hide them, clear the
"Keep track of formatting" check box in Tools | Options, Edit tab.
