How to start new page number sequence in a header.

How can I start an new page number sequence in headers in the middle of a
document? How can the numbering be set to a Roman numeral sequence?

Insert a page break and restart the numbering - as for the roman numerals
add a roman switch -
{ PAGE \* ROMAN }
