How to set reply to auto html rather than plain text

How do I set outlook to, when I reply to a message, set my reply message in
html format automatically? I do not want courier in plain text to be the
default.

Replies are sent in the format they are received. That's considered courteous
since some businesses & ISP's do not allow html. To change it go to Tools,
Options, Mail Format, Fonts button.

But can I also format it to be in html mode instead of plain text mode?
Here's the biggest issue: my signature has different fonts throughout. In
Plain Text mode which is default for replying and forwarding I cannot use
multiple fonts.

The problem: I need to reply in HTML mode so that my signature will appear
correctly. I use more than one font in it.

You'd have to change the format manually.
