Okay, after months of agonizing over this, as soon as I post the question, I
figure it out. I'll outline what I found, but if anyone knows an easier
method I'd be happy to hear it!
What I did: Go to Tools Menu > Analyze > Documenter. Check your qry and
click OK. A report comes up and one of the properties defined is
"Subdatasheet Name". Duh. Now I know which qry to add/remove fields to/from
so that they now display in the Subdatasheet mode.
