how do I track changes in an Outlook mail?

As I edit an Outlook Email in Word, I would like to track the changes, but
the "Tools-Track Changes" command is always gray. I tried to use Help, but
to no avail.
Is it that this feature, so practical in Word, is simply not accessible in
Outlook?
