Each time I open a previously saved Word document the date and times in the
document up dates to the present date. How do I stop this.

Your description indicates your document has a DATE field in it. These are
designed to update automatically. You could lock it, via Ctrl-F11, but that
doesn't get you back to the original date.
Other possibilities are to use a CREATEDATE field or a PRINTDATE field
instead. The CREATEDATE field shows when the document was first created, or
last saved via Save-As, and the PRINTDATE field shows when the document was
last printed. You can change the date field to either of these by selecting
it, pressing Shift-F9 to expose the field code and changing 'DATE' to
'CREATEDATE' or 'PRINTDATE'.
There's another date field, 'SAVEDATE', which shows when a document was last
saved, but that probably won't help here (unless you want to temporarily
show when the document was last saved), as changing the existing field
changes the document and you can't save the change without the 'SAVEDATE'
updating ...
