how do I send an email that cannot be altered?

Then send a pdf as an attachment.....is the easiest answer.

There ARE other ways - such as using DRM but AFAIK that only works within a
Windows server 2003 domain.......once the email gets out of the domain, (ie
if it's sent to an internet email address) then nothing will stop any
alterations.
