How do I keep mail on Exchange server after receiving in Outlook?

We are currently migrating from Lotus Notes/Domino to Outlook/Exchange and
have 1 user that ends up having all of her mail deleted from the exchange
server when she receives it in her Outlook client.

This appears to be the same thing that happens when you have a POP3 account
but forget the setting to leave a copy of the message on the server. Is
there any settings for an Exchange mailbox that needs/could be set to fix
this?

she needs to set her default delivery location to be the exchange server,
not a pst.
