How do I create a Vcard without access to my activities?

I'd like to include a Vcard with my contact information in addition to my
signature but I see that if you click on "Activities" all my emails and other
items are accessible. Is there a way to turn that off or some other way to
create a Vcard that doesn't include that information?

The vCard on its own doesn't contain this information. Because you've got
vCard associated with Outlook you immediately get access to the Outlook
features like Activities which is basically a local search. You can se it
for yourself by opening the vCard in Notepad.

I saw that in Notepad but when I added it to my signature, then clicked on
Activities, everything pops up. I'm sorry if this is a stupid question, but
is there a way of disassociating the vCard with Outlook so it doesn't happen?
I tried to create a separate vCard for this purpose but it wouldn't let me
enter my email address.

You can stop being paranoid about this. No one is monitoring the activities in your Outlook folders. A vCard is a text file that contains information about a contact. You already saw this for yourself by opening it in Notepad. It contains no information about activities. REPEATING: It contains no information about activities.

The Activities page builds a list *on the fly* of items related to the current contact. It builds that list from the *current user's* Outlook folders. If someone has activities related to you, they'll see them when they open the vCard you sent, because Outlook creates one of its own contacts from the vCard. If you open that vCard yourself, Outlook creates a contact with your information on it, and that contact's Activities page will show all the activities in your folders involving you.

Seeing is believing. You've already seen that a vCard file is just a text file that you can open it in Notepad. Believe what you see.
