How do I create a task field in format of text with popup list

I can create a user-defined field, but I really want it to be a drop down
list with values that I define. In the format columns window, I can see that
the Status field works this way, and the format is called "Text with Popup
List". But I am not given this option when I create a field.

Furthermore, my user-defined fields don't seem to appear in the list of
fields to sort by...is it true, I can't create a field and then sort my tasks
by this field?

For your first question -- you may have to actually create a custom form to
get a dropdown field to work. I don't think they will work in the task list.

For the second question, what view are you using on your Tasks folder and do
the user-created fields appear in that view?
