How do I create a collapsible list in Word?

Word isn't built for this. You can use outline view and get some of what you
want.

You're in luck

There is now an add-in for Word supporting the creation of collapsibles (hideable segments). You can create an individual stand-alone collapsible, or collapsible lists, or collapsible headings; and many other features. See More Addin, www.moreaddin.com
