How do I add more levels of priorities in the task window?

In setting the priority for a task, low, medium and high are not enough
options. How do I add more options. e.g. 1-5, 1= high and 5=low.

It is not possible to change the behavior of the built-in field. You can add your own custom numeric field and put whatever numbers you want in it.
