how best to reconcile middle-aged eyes to a new 1280x1024 LCD screen

My new flat panel has a native resolution of 1280x1024.

That's the resolution at which the picture is definitely sharpest. But, I
don't want text on the screen to be pin-sized. I have gone to Display
Properties > Appearance and chosen Largest Fonts, but there are still fonts
here and there, which are tiny.

Can anyone point me at a comprehensive list or guide to how I can adjust ALL
of the fonts I have to look at on the screen, so that I can enjoy my LCD at
its native resolution, and still retain what little eyesight I have left?

In display properties click on advanced. Adjust the DPI setting to a
larger size.

Go to display>properties>setting tab>advanced>"General" tab >select font
size
I hope that is what you are looking for. There is also a setting for
desktop icon text font size.

Being older myself, you want to be sure that the Advanced
appearance, effects setting for rendering is "Clear Type". This
will make things much easier on the eyes. I believe the option
actually reads "Font Smoothing". Also, all LCD Monitors will
have a Monitor Adjustment tool that you use to fine tune the
settings to match your Video card's capabilities. Finally, make
sure in Device Manager that the monitor is correctly defined
as to Vendor & Model and not listed as "Plug & Play"

Control Panel - Display, start on the Settings page and click Advanced,
set DPI to 125% , Apply OK, and see the general effect.

Then on the Appearance page, click that Advanced button and select some
of the items in the Item drop-down and adjust sizes.

In particular for Icon, I suggest as start point a size of 40 and a font
size of 8, perhaps also in Bold; and for the Title Bars, Menus and
Caption Buttons a size of 24 with maybe a 9 point font. You can try
different fonts too - there is a lot of customisation possible
..
