would I be better off getting a FX-60 instead of upgrading my current

that is a second box, or keep investing in my dual box
i do a lot of photography related stuff, such as raw conversion and photo
retouching

current Opterons are 250's

Stick with the Opteron box. If you want to upgrade it you could replace
the Opterons with dual core Opterons giving you 4 total cores.

Opteron 250 is 2.4 GHz

FX60 is dual 2.6 GHz

Opteron 285 is dual 2.6 GHz

Stick with the present system. If you want best performance with only a CPU
upgrade, switch to 285s, and you can get 4 cores total, instead if 2 with the
single FX60. If 2 cores are all you can use, the 256 is at 3 GHz...
