{formtext} fields

I have opened a document and it displays {formtext} where
there should be actual editable text. Anyone know what
the problem is here?

According to the Word help file:

Fields for use with forms
{ FORMCHECKBOX }
{ FORMDROPDOWN }
{ FORMTEXT }

These fields insert a check box, a drop-down list, or a text box in a form. You cannot insert or modify these fields directly. They're inserted by the Check Box Form Field, Text Form Field, and Drop-Down Form Field buttons on the Forms toolbar. To edit these fields, you must use the Form Field Options button on the Forms toolbar.

This means that you are displaying field codes instead of field results. As
the others have suggested, Alt+F9 toggles this display, but you can't use
Alt+F9 in a protected form. Close the form, open another document in Word if
you don't have a blank document already open, press Alt+F9, and then open
your form again. You can also accomplish the same thing by clearing the
"Field codes" check box on the View tab of Tools | Options.
