I tried to have the form go to my email address I get this
error message: Saving Form Results to E-Mail will not
work unless either the "SMTPHost" or "SendmailCommand"
server configuration parameters are set. What does that
mean?

It means that you must be publishing to a server that has the FP extensions
installed and configured to send email. Your host must configure the
extensions for your account to use a SMTP server. Have you contacted your
host?
