form letters

How can I set up words or small phrases a form letter that need to be changed
with every letter. I do not want to use mail merge, because these letters
are only completed one at a time, never in bulk. I want the areas of the
letter that need to be completed to be eye-catching, such as a greyed out
area. Any suggestions?

You could use macrobutton fields. Note, though, that I regularly use
mailmerge for letters and forms that are done one at a time and not in bulk.
You don't have to produce the completed merge for more than one record at a
time.

For something where the only places you make changes are the ones you
designate, you would want to look into what Word calls an "online form."
