Follow Up flags in Outlook

When I flag an item in Outlook for follow up, the default time shown for
follow up is 5 p.m. This is after office hours for me, so I always have to
change it manually to something like 8 a.m.
I wonder if it is possible to change the default value of time when items
are flagged.
Any help with this would be greatly appreciated.

Which flag are you using and in which version of Outlook?
The reminder times are determined by your configured working hours in
Outlook.

That is controlled by your working hours. Today flags are 1 hr before the
end of the workday, flags for tomorrow or later default to the start of the
work day.

I have been reading about "flagging for today, tomorrow, etc" but I don't see
that option with my email messages. I use Outlook 2007.
I do see that with contacts, but I'm more interested in flagging emails in a
more detailed way.
I also read an article about categorizing emails, but I don't see an option
to do that either.

I am referring to received emails, by the way.
