How can I configure the PowerPoint so that the font size only jumps by 1 or 2 when clicking the "Increase Font Size" button?

You can't set PPT up to do that, but one of the tools included in the free PPTools Starter Set at http://get.pptools.com does exactly that (or you can change it to bump up/down in 2,4,8 ... whatever point increments by editing an INI file)
