Why when I put in the dimensions for a custom envelope do
I get an error message that the size is not valid? This
is for a greeting card envelope that measures 7.25"W x
5.25"H. Are there parameters for what sizes are not valid?

The size of custom paper is strictly controlled by the printer driver and
not by Word itself. Where the driver will not allow such a size, you need to
use a larger standard paper size and cobble the margins to allow for the
differences. The final result will be the same.
