My roommate and I each have an email account. Therefore, when receiving
emails, I am receiving all of her emails on my email account. She has to log
onto my account to read her mail. Can you help.

The answer is that you DON'T have an email account each - they are both
aliases of a master account, otherwise this would not be happening.
Not much you can do about it in Windows Mail AFAIK other than get truly
separate email accounts. Have you thought of something like Googlemail?
