I have changed my default email from Outlook Express to MS Office Outlook
(2007) (start>control panel>internet options>programs) and while most of my
incoming email is now received into Outlook, some of it is still received
into Outlook Express.

The items that are still received into OE are from the same senders.

Any suggestions about rectifying this would be welcome.

Don't use Outlook Express at all or remove your email accounts from it.
If you use OE for News then create a shortcut to msimn.exe with the /outnews
switch added.
