Display as name different than email address

For some reason my entire database fields have been mixed up and I wonder if
there is a simple way to repair. What has happened is all of my email
contacts have a different display name than what it should have. when I try
to change them it changes the email address.

The email display name? The Outlook 2003/2007 way is to include the email
