Deleted items do not go to Deleted folder... why not???

When I delete emails I expect to see them in the Deleted Folder - very
handy if one deletes by accident. But, they don't go there or, at least,
very very rarely. What am I doing wrong?

I'm using Outlook 2003.

When pressing DEL does it indicate that it will be permanently deleted?
If you delete an unread item (leave it marked as unread) does Deleted Items
folder indicate that there is an item there?
