Default programs absurdity

I don't know why, and I hope that this is not a joke, but I'm not able
to show other programs into the default programs list, and so I cannot
easily change the default file association.
Browsing some web page I saw, for example, a picture where Firefox was
included, but despite Firefox is on my pc, despite I manually change in
file extension the .htm and html files, the protocols http/s and ftp
(also here I installed CuteFTP) is associated with Explorer.
Certainly new IE7 over Vista is incredible better than previous IE
version or IE7 over XP, but this is my pc and I want to change basics
thing at least.
Any suggestion?

Andrea, if English isn't your native language, try to rephrase the question
