move your mouse over the time and the date should appear or it does on mine.
I'm not sure this is what you want, but I hope it helps.

Make the task bar double high, by dragging it top edge up.(unlock it first
if its locked)

Download and install TClock. It's free and lets you set up the toolbar display
to your satisfaction (mine currently shows "Mon - Oct 27 - 1:16 PM").
