Creating a Contacts and Calendar only Outlook client?

Greetings.
We are replacing Exchange as email server, however, we would like to
keep its Calendar and Contacts functionality. Users would keep using
Outlook as a client, reading email on non-Exchange IMAP account, but
using Calendar and Contacts from Exchange. Calendar-related email
would be forwarded to the external account.

As we found out, doing the above requires that BOTH email accounts
(exchange and non-exchange) be present in the outlook sidebar. As
soon as the exchange email account is removed, gone are Contacts
and Calendar.

Leaving both accounts would confuse users to no end (two INBOXes, etc.
etc.). Is there a way to do what I described above having only one
root folder?

Nope. The active calendar will ALWAYS be in the delivery location, the same
folder set as the active Inbox and IMAP folders can never be the delivery
location. IMAP accounts will always have their own, separate folder set
that matches the folders on the server. If you continue to use Exchange for
the calendar and contacts, expecting to be able to share the calendar or
contacts and have your free/busy information available to people, then there
will always be an Inbox on the Exchange server that also shows in Outlook.
